Quick & Delicious Coleslaw

This Coleslaw is a hit, even with the kids!

 

 

Salad Ingredients:

½ Small white cabbage, thinly sliced

1/8 small red cabbage, thinly sliced

½ red onion chopped

1 stalk of celery cubed in small pieces

1 large Carrot julienned

½ cup snow peas (optional)

 

Dressing Ingredients:

2 Cups full fat Soy Milk or 1 block of silken/soft tofu

½ a Lemon Juice

1-2 tbsp maple syrup

1 tsp soy sauce

1/2 tsp salt or vegan chicken flavoured salt

2 tbsp olive oil (optional)

 

 

Method:

  1. Place all chopped, sliced and julienned vegetables into a large mixing bowl.
  2. Add all dressing ingredients into a medium mixing bowl, adjust to taste.  If using soymilk for the dressing the lemon will curdle the sauce.  If you are using tofu, add all ingredients to a blender and process until smooth – this will give a thicker sauce consistency.  But both methods are just as tasty.
  3. Add dressing sauce to the mixed vegetables and mix well to combine.
