Carob Orange Cupcakes
These are very tasty, moist and soft on the inside...
1 ½ Cups all-purpose flour
½ cup raw sugar (if using coconut sugar add 2 extra tbsp.)
½ cup carob powder
¼ ts. salt
2 Tbsp Coffee substitute
¼ Cup Rice brand/Grapeseed oil & ¼ cup tahini paste (or ½ cup vegan mayonnaise)
1 tsp. Grated Orange peel
½ cup orange juice
1 tsp baking powder
1 tsp baking soda
Mix all dry ingredients in large bowl
Add all other wet ingredients and mix well
Divide into cupcake tins or Pour into a greased cake tin (to make it into a cake)
Bake in a preheated oven at 180 degrees Celsius for 12-15mins if making into cupcakes, or 20-35mins if making into a cake.
Let cool completely before turning out onto drying rack and frost with desired frosting.
Note: can omit the orange juice and replace it with ½ cup of coconut cream instead.
