Tony's Vegan Meatloaf

Very Delicious and wholesome –

Hubby seriously couldn't believe that it wasn't the real thing.

So I decided to name it after him..

 

Ingredients:
½ cup finely ground pumkin seeds
½ cup finely ground almonds
1 cup finely ground walnuts
5 large potatoes thinly grated (2.5-3 Cups)
2 cup soft breadcrumbs (I simply blend up homemade bread in a food processor until crumbled)
2 Tbsp Tomato Paste
1 onion finely chopped
½ cup rolled oats
1.5 Tbsp vegan Beef seasoning or 2 tsp Celtic salt
¾ cups Savoury Yeast Flakes
2 Tbsp Soy Sauce
2 Tbsp Coconut Sugar
1/4 Cup water

1 Tbsp Rice brand  Oil 


Method:
1.    Place all ingredients into a large mixing bowl and mix well with hands. Make sure to squeeze it to allow the juices from the potatoes and onions to bind with all the other ingredients.
2.    Grease a pan and transfer mixture into the pan, making sure to press down firmly.
3.    Cover pan with foil and bake in the oven at 180 degrees for 40mins.
4.    Uncover and spread a layer of tomato sauce over the top (1/3 cup tomato sauce mix with 1 tbsp honey) and bake for an extra 10mins.

Note: Nice served with a drizzle of bbq sauce with potato salad or any other salad.  Also super delicious in a sandwich with mayo, bbq sauce and salad.
