Walnut Cookies

These cookies are very delicious yet simple, quick and easy to make!

My kids absolutely love eating and making them.

 

These pictures may not do these cookies much justice since my kids formed them themselves (including my 2 year old girl) but they do taste absolutely lovely...

Ingredients:

1 ¼ cup unbleached white flour

1 cup wholemeal flour

¼ cup Oat bran

1 cup Coconut Sugar OR ¾ cup raw sugar

½ Cup Soy flour

1 tsp fine Celtic salt

1 tsp Aluminium Free Baking Powder

1 Cup Walnuts, chopped

1 Cup Coconut Cream

¼ Cup Rice Bran Oil

1 tsp Vanilla (optional)

 

Method:

  1. Preheat oven to 180 degrees C.

  2. In a large mixing bowl add all dry ingredients (all except for the last 3 ingredients) and mix well, making sure to break down any lumps.

  3. Add the last 3 ingredients and mix well. If the mixture seems a little too dry, you can add extra Coconut cream (I may have added an extra 2 tbsp).  Mix well with hands. The dough should be rather soft yet firm enough that you can still form them into shapes (using cookie cutters) if desired.

  4. Layer parchment paper on two baking trays.

  5. Either flatten them and cut into shapes using cookie cutters or scope out balls and flatten with your hands into round shapes and transfer onto trays.  Repeat until all the dough is done.

  6. Bake for 15-20 mins in the oven. You may need to rotate the cookies after 10 mins of baking, by swapping cookies from the top tray with the cookies on the bottom tray, to ensure even baking. Once done, they should be slightly golden.

  7. Transfer cookies onto cooling racks.  Best to allow them to cool completely before eating, as they will then be crunchy on the outside and slightly chewy on the inside. Yummy!
