
Delicious Vegan GF Bread


Deliciously Soft, Moist, and slightly chewy.. Yum...
My Kids love it and actually prefer this over traditional wheat bread!
Ingredients:
6 (840g) Cups GF Flour Mix or (150g Millet flour, 100g Brown Rice flour; 50g Soy Flour; 220g Tapioca Starch; 120g Sweet Rice Flour; 200g Potato Starch)
3 tsp xanthan gum
½ tsp cream of tartar or (2 tsp baking powder; 1 tsp baking soda)
8 tbsp coconut sugar
4 tsp instant dry yeast
2 tsp Apple cider vinegar/Lemon
2 egg & 2 egg white replacers (Organs Brand - 8 tsp egg replacer : 3 tbsp water)
2 cup milk or (4/3 C milk; 2/3 C coconut cream)
1 cup warm/hot water
4 tbsp Coconut cream/ Vegan butter melted
4 tbsp oil
Method:

Add Lemon/vinegar, hot water, sugar & milk/Coconut Cream into a small bowl. Mix then add yeast and leave for 10mins.

Pour into bread machine pan.

Add all dry ingredients into bread machine.

Set onto GF mode.

You may need to initially assist the mixing of the flours in the bread machine just to ensure all the flour mixture is mixed in properly.

Consistency should be similar to very thick batter mixture, sticky but not runny.

Once bread has been cooked, cool on a wire rack until completely cooled before slicing.
Note: The pictures here are only using half the recipe, as it was a trial and I was not sure how it would turn out. But it turned out so good that I will be making the full version soon, at least for the kids since they loved it so much.
