
Papaya Salad with Tofu

Salad base
2 cups green papaya (shredded)
1 carrot (julienned)
200g firm tofu (fried, sliced)
Herbs & crunch
Mint leaves
Coriander
2 tbsp roasted peanuts (crushed)
2 tbsp fried shallots

🥢 Option 1: Classic Vietnamese (Light)
2 tbsp 🌱 vegan fish sauce
2 tbsp water
1–2 tsp sugar
1 tbsp lime juice
1 clove garlic (minced)
Chili (optional)

2 tbsp peanut butter
1 tbsp soy sauce
1 tsp sugar
1 tbsp lime juice
1–2 tbsp warm water

👩🍳 Instructions
Prepare papaya
Peel, remove seeds, shred into thin strips
Prepare tofu
Fry tofu until golden → slice thin
Mix salad
Combine papaya, carrot, tofu, herbs
Add dressing
Toss evenly with your chosen dressing
Finish
Top with peanuts + fried shallots
