Chia Seed Pudding
Fun, Healthy and Delicious!
Ingredients:
2.5 cups Soy Milk (or other milk of choice)
½ cup chia seeds
½ tsp Vanilla Extract
¼ Cup Maple Syrup or honey
Method:
Mix all ingredients together well. If using honey, you may need to warm up ½ cup of the Milk that you are using and mix the honey into it in order to dissolve the honey, and pour the milk and honey mixture back to the rest of the ingredients and mix well.
Refrigerate for at least 4 hours or even better overnight.
Next morning stir the chia seed pudding again and let it sit for another 5-10mins, this is to allow any chia seeds that had not a chance to soak up much milk prior to do so. This will also all the pudding to become more gelled.
To serve, top with your favourite fruits and nuts, or add to your oatmeal as I love to do.
