Carob Fudge
This is deliciously good – my kids and husband totally loved it!
Ingredients:
1 Cup unpasteurised honey
1 Cup raw peanut butter or almond butter
1 tsp salt (if using peanut butter with added salt, omit salt here)
1.5 Cup raw Carob powder
1 cup raw sunflower seeds, whole
3/4 cup raw fine desiccated coconut
3/4 cup raw sesame seeds, whole
½ cup puffed brown rice (optional)
Method:
Mix all ingredients together in a large mixing bowl.
Press into a shallow square or rectangular pan.
Score/cut into square pieces and chill for a few hours.
Remove from fridge and go over the score/cut lines and place each piece neatly in a large container. Separate each layer with cling wrap so they do not stick to each other.
Keep in the fridge to stay firm.
Note: Be sure to use raw carob powder for this, which really gives it it's unique deliciousness.
Although if you prefer to use roasted carob powder it should still taste great, but you won't get the same taste as you would with raw carob. Roasted carob powder would also give you a much darker colour than raw.
Also if you prefer it to be more soft and fudgy, only use 1 Cup of raw carob powder and 1/2 Cup each of fine desiccated coconut and sesame seeds.
