Raw Mashed "Potatoes"

 

 

Creamy, healthy and delicious – these cauliflower based mash, topped with some homemade gravy, vegan meatballs and a nice fresh salad will set you up for a comfortingly hearty and satisfying meal…

 

Ingredients:

3 cups cauliflower, broken or chopped into roughly small pieces

1 cup cashews

1/3 cup Soy Milk (or your favourite vegan milk - use more or less depending on preferred consistency)

½ tsp Celtic Salt

1 tsp coconut sugar

1 tbsp Olive Oil (optional)

1 clove garlic (optional)

 

Method:

  1. Place all ingredients in a food processor or high speed blender and blend until smooth and creamy.  If using a blender you will need to use a tamper while blending this up.  Taste and adjust seasoning according to taste.

     

     

Note: You can also try adding 1 tbsp of unhulled tahini paste to this mash - it will give it an especially nutty taste.
