Overnight Oats with Chia Seeds
Creamy, Healthy and Delicious!
Ingredients:
1 cup quick (or rolled) oats
1 cup soy milk
2 Tbsp chia seeds (black or white)
1 Tbsp maple syrup
2 tsp vanilla extract (optional)
Method:

Mix all ingredients together in a container, stir well and refrigerate overnight.

Next morning, remove from the fridge and drizzle with a little more maple syrup before serving. Either serve alongside a nice bowl/plate of fresh fruits and nuts of choice, or top off with fruits and nuts.

In the winter, I would warm it up a little on the stove first just to take out the chill before (drizzling with extra maple syrup and) serving, probably for 20 seconds on medium heat. This step is not necessary if you do not mind having it cold.
Note: I love to eat this topped with our sweet tahini spread and a big plate of fresh fruit salad..
